Rattlesnake Beans
No idea how this recipe came by the name :sick but it has become a much requested recipe at group cookouts. We like it best cooked outdoors in a dutch oven but it can be cooked indoors as well.
Rattlesnake Beans
1 1/2 lbs of smoked sausage cut into bite sized pieces
1 lb of bacon cut bite size
1 onion chopped (if the onions are strong smelling i will use less so they don't overwhelm the flavor of the other ingredients)
1/2 c brown sugar
1/2 c molasses
1/2 c crushed pineapple
4 c pork and beans
In a 12" dutch oven cook bacon, add onions and cook until liquid is clear and onion is tender. (The original recipe does not call for draining off the bacon fat. i often transfer the bacon and onions to a bowl with a slotted spoon and drain off part of the fat if i don't have relatively lean bacon but a certain amount of the fat adds flavor of course. Just personal preference on that one.) Add smoked sausage, brown sugar, molasses, pineapple and beans.
Cook at 350 degrees for 45 minutes.
