I make this stuff on the grill all the time in the summer. My apologies beforehand as I really don't measure anything...
Stuffed Zucchini
2 medium zucchinis split lengthwise and scooped out
Snip off the stem end and dice up
1 or 2 plum tomato diced
1 small onion diced
2 cloves garlic crushed
black olives sliced (as many as you want to taste)
a tablespoon or two of parmesan cheese
oregano, basil, parsely to taste
a tablespoon or two or three of olive oil
shredded mozzarella cheese
Mix all except split zucchinis into bowl and let set for an hour or so in the
fridge. Scoop into hollowed out zucchinis and place on grill for 20 minutes or so. Just before done sprinkle with mozzarella and continue to roast until cheese melts.
Roasted taters
4 white potatoes (don't use russet... makes mashed instead) :r
1 small onion sliced thin
4 strips crisp bacon
2 cloves garlic
a little olive oil
4 pieces aluminum foil... big enough to fold into packets
Wash and slice potatoes in about 1/4 inch slices and place on individual pieces of aluminum foil that have been coated with oil. Split rest of ingredients up between the packs. Fold up the foil to make little packs and toss on the grill for about 20-30 minutes.
Green Beans... uhm I guess Italian Style
Fresh Green beans (the kind you need to snip) cut in half
Some garlic crushed
some olive oil
some italian dressing
some onion diced
some bread crumbs
some parmesan cheese
Blanch the beans then toss into frying pan with oil, saute with onion and garlic until onion is tender. Beans should be a bit on the crisp side, if you don't like them that way cook longer. Add a tablespoon or two of italian dressing, the bread crumbs and cheese and toss to coat evenly. Great hot... better cold...
