In honor of those of us who own slightly less than what some of us might classify as an ovate 'eggs.'
This is just a sampling of one of the many recipes I found. I opted for the healthy version.
Olive oil cooking spray
3/4 cup egg substitute- such as Egg Beaters
1/2 ounce nonfat Swiss cheese
1/4 teaspoon chipotle sauce
1/8 teaspoon freshly ground black pepper
1 teaspoon soy “bacon” bits
1 teaspoon chopped fresh parsley
1. Spray the special omelet pan with olive oil cooking spray and place over medium high heat. Pour the egg substitute evenly over the bottom of the hot pan and shake gently to make sure it doesn't stick.
2. When bubbles start to appear on the top of the egg, drop the slice of cheese in the middle. Sprinkle chipotle sauce and pepper over the whole thing.
3. When the cheese just begins to melt, fold each end of the omelet over the center, making a square. The residual heat will finish cooking the top of the eggs and melt the cheese.
Sprinkle the “bacon” bits and parsley on top and serve. 1 serving.
