Someone gave me this recipe at a party and I couldn't believe it could be possible.. or very good. Took a year before I tried it and I turned out to be wrong on both original thoughts.
Seems like a camping recipe to me! (but great at home too as an emergency dessert)

Ingredients : box of angel food cake mix (I use Robin Hood)
19 ounce tin of crushed pineapple AND the juice

Method open box, empty into bowl
open tin, add to mix in bowl
mix
pour into 9 x 12 inch glass pan
bake as per instructions on box

Cool and serve as cut up squares. Very low fat but very satisfying. Sometimes I put a homemade strawberry/ rhubarb sauce (or blueberries and whip cream) on it.
Have had lots of rave reviews.

The pineapple-angel food cake is a world renowned weight watchers specialty.

Another 2 ingredient easy dessert that also gets in a serving of vegetables:

One cake mix -- either chocolate or spice are good choices.
One 19 oz can of plain pureed pumpkin

Dump both into a bowl. Mix.
Bake at 350 in muffin tins until toothpick inserted comes out clean.

Freeze extremely well. Taste like fudgy brownies.
