Camping with electric near Las Vegas

We live in southern California and are returning home from Fruita campground in Utah during the summer months. We are looking for a stop to break up the long drive. We have found a few places on either side of Las Vegas on the 15 to spend the night, but we want somewhere that has electricity so we can run the air conditioner if needed. We know (and like) Valley of Fire but it is hard to get in later in the day and harder to get a site with power. Does anyone have suggestions? Looking more for a one night stop over than a destination spot.

Snow Canyon, Utah is north-east of Las Vegas, north of St. George, near I15 and it is a beauty. I am sure they have electric sites. We stopped there once a few years ago.
