I agree, machine screws and Nylock nuts is a better solution for fiberglass (they also help avoid over-torquing), but it's more expensive and more time consuming, so manufacturers default to rivets...

Lots of difference.
Lots of difference in how they distribute the load. Also, some rivets are made to be water tight, and some are not.
