Here you'll find tons of advice, but more importantly tons of knowledge.
One thing to be aware of is the interior cabinets provide support for the shell. A gutted trailer will tend to sag and bulge out at the waist, which can cause the door to fit poorly, among other things.
Until you replace the interior, I'd recommend installing a couple of braces between the floor and ceiling. 2x4s with squares of plywood top and bottom to spread the load will work. If it's been sitting empty for a while, you might want to assume it's already sagged a little and apply gentle pressure when installing the braces.
I'm currently gutting a 1985 16' Casita, so I'll be following your progress. I hadn't anticipated gutting it, but the floor is pretty mushy and that seems like the factor that leads people to head down that path.
I too am doing a complete restoration on a 1981 Casita 13'. It's a little overwhelming but I should be able to handle it.Finding glazing is not working out too well so far. Just started this project. Removed rotten floor and dining area seats thus far. Oh boy....
